Amarillo & Citra hops have more of a stone fruit nose and a floral-citrus taste. Swaying from the more traditional English & west coast IPA, this brew has less malt sweetness and a stronger hop presence, yet the lingering hop bitterness is quick enough to make this brew a crushable thirst quencher.

Almost 600 years ago in the Belgian village of Hoegaarden, a band of monks experimented by adding oddball botanicals from halfway around the world to their traditional wheat beer. Inspired by their creation, this version is accented with additions of lemon peel, foraged elderflowers and green cardamom spice. Overall Flavour: Light roast & chocolate flavours mingle with cold brew coffee notes, finishing crisp

Beer-Geek Cheat Sheet:  To compliment the nature of this yeast, speciality malts and hops were used to create a clean, crisp and crushable black lager. This process is not that unlike a Black Diamond run on the mountain…steep - full of flavour; narrow - low in ABV; fast - really easy to drink. It may be unconventional, but let's be honest, there isn’t anything difficult about drinking this lager! Ready to enjoy amidst the trails, cliffs, and high winds - or right here at Land & Sea Brewing.

WIT’S UP DOC? - 25 IBU - 6.3%ABV

Aroma:
Stone fruit, citrus, white pepper
Flavour: Refreshing & semi-dry with tastes of fresh apricots, green mangoes & fluffy wheat cereal

Beer-Geek Cheat Sheet: Brewed with a classic Belgian Abbey yeast strain and hopped lightly with Styrian hops, this wheat ale was then fermented on over 200lbs of Apricot...and 20lbs of fresh carrots. Yes, carrots! From our friends at Sieffert’s Farm, we pulverized & juiced these midsummer gems to condition this juicy apricot Wit for a refreshing balance of tart & sweet. The colour is bright, the mouthfeel is fluffy & the taste is thirst quenching. Tangy apricot is complemented by the sweetness of the carrots, carried by the medium body of the wheat ale and the light handed dry-hop. RIDGELINE OAT PORTER - 28 IBU - 6.0% ABV

Style: Robust Oat Porter Appearance: Deep & dark with a thick tan head Aroma: Roasty, toasty, rich malt character Overall Flavour: A substantial, malty dark ale with a complex and flavorful biscotti chocolate

Beer-Geek Cheat Sheet: bready, toffee-like, caramelly, chocolate, coffee, rich, and/or sweet. Although a rather broad style open to brewer interpretation, it may be distinguished from Stout as lacking a strong roasted barley character. It differs from a brown porter in that a black patent or roasted grain character is usually present, and it can be stronger in alcohol. Roast intensity and malt flavors can also vary significantly. May or may not have a strong hop character, and may or may not have significant fermentation by-products; thus may seem to have an “American” or “English” character History: Stronger, hoppier and/or roastier version of porter designed as either a historical throwback or an American interpretation of the style. Traditional versions will have a more subtle hop character (often English), while modern versions may be considerably more aggressive. Both types are equally valid.

FRONT PORCH FARMHOUSE ALE - 30 IBU 4.5%ABV Style: French-Style Saison Appearance: Pale yellow with a slight haze & white foam Aroma: Pepper, Floral, Citrus Overall Flavour: Snappy spice, balanced floral hops and a brisk finish

Beer-Geek Cheat Sheet: Farmhouse ales are traditionally summer beers in Belgium & France drunk by the hard working class throughout crop planting, maintenance, and harvest. This was complemented by lightly hopping with French hop varieties; Strisselspalt, Triskel and Aramis, producing great drinkability from this French inspired sessionable ale. It pours a pale yellow with a frothy white head and is light-bodied with light peppery notes to refresh, and balanced floral & grassy hop elements. The finish is brisk and will have you sipping it on your porch as the days grow longer and the sun shines brighter. Enjoy!

RANGER STATION RED IPA - 50 IBU 4.8% ABV Style: Session IPA Appearance: Crimson with a soft tan head Aroma: Flowering herbs, toffee & apricot Overall Flavour: Soft citrus & pine resin balanced by a soft caramel malt backbone

Beer-Geek Cheat Sheet: Everyone wants to check out the Ranger Station! Immensely crushable at 4.8%abv, this smol ipa is high in IBUs, and balanced by its red malt character. This is a gentle approach on an IPA that takes the session beer concept but boasts all of the hop characters of a stronger IPA. That means you get all of the hop flavour from the same dry-hopping rates used with a regular IPA, but you can have a couple of pints and not feel too slowed down by it. Carefully selected malts lend to the beautiful red hue, and bright pacific northwestern hops make it a sure-fire thirst quencher for all beer lovers al

HELGA NORDIC BLONDE - 30IBU - 5.4%ABV COLLABORATION W/ MOUNT ARROWSMITH BREWING! Style: Kveik Lagered Ale Appearance: Blonde & beautiful holding a nice white foam Aroma: Biscuits, yuzu lemon & allspice Overall Flavour: Medium bodied sweet malt character, with complex rustic spice notes that linger softly & finish dry

Beer-Geek Cheat Sheet: This is a collaboration brew with our friends @mabrewing! Helga is a Scandinavian blonde ale that was fermented at lower ale temperatures and lagered for a longer amount of time than most ales. This special summer ale was brewed to celebrate the enhanced amount of sunlight during the long awaited seasons of the sun. This extra sunlight promotes exceptional time for plants to grow, leaving wild edibles like Juniper ripe and ready to be foraged. With the love of the variety of Norwegian Kveik (yeast) strains, we decided to brew something a bit different to highlight these farmhouse yeasts & plants of the midnight sun. Inspired by the traditional Sahti brew, this blonde was brewed with spices & juniper berries. The result is a complex refreshing ale that boasts a beautiful bouquet aroma, fresh herbal & citrus notes, with a full mouthfeel and a dry resinous finish. Skoal!

SEAFARER STOUT - 60 IBU - 6.0% ABV Style: Foreign Export Stout Appearance: Jet black with ruby hues, opaque with a persistent tan head Aroma: Baker's chocolate, ground coffee, touch of dried fruit Overall Flavour: Dark, moderately strong and balanced ale with roasty toasty goodness

Beer-Geek Cheat Sheet: Legend has it that the Stout style arose as a term to describe a strong porter, but how strong depended upon the time and the brewer. A relic from the stouts of the UK, export stouts were traditionally a more robust version of a brew, amped-up to survive the journey overseas. As a special style of stout that is brewed bigger than normal for a long journey traditionally overseas. When creating this beer, the idea was to have a well rounded, less obnoxious cousin of the imperial stout, and give a big-brother type hug to the typical dry Irish stout we all know and love. Our Foreign Export Stout uses a blend of caramel and roasted malts, which provide assertive notes of espresso and bittersweet bakers chocolate. The perceived malt aroma & flavor are from coffee-like roasted barley and a blend of traditional English malts. The light caramel flavors give way to a distinctive dry-roasted bitterness in the finish, held up by a medium body and a sweep of sweetness. This follows a firm hop bitterness, with no real discernible hop flavour, even though the IBUs are substantial. With a mouthfeel that’s medium bodied and boasts medium-low carbonation, it is certainly a sipper meant to accompany all you land-lubber and seafarers alike.

TWILIGHT SOUR ALE - 30IBU - 4.7%ABV COLLABORATION W/ BEACHFIRE BREWING! Style: Dry-Hopped Kveik Sour
Appearance: Indigo Purple
Aroma: Bright citrus, kiwi berries, vinous, herbal
Overall Flavour: Puckering sour grape candies, citrus fruits and herbaceous violets finishing dry and crisp.

Beer-Geek Cheat Sheet: A collaboration with our buds @beachfirebrewingco ! Precisely soured to a pleasantly tart pH, this ale was then fermented with Norwegian farmhouse Kveik yeast and dry-hopped with Idaho 7 & Galaxy hops. It was then lovingly conditioned on heaps of Dok Anchan from Thailand, which gives this tasty brew its beautiful hue! Butterfly-pea leaf tisane changes color based on the pH level of the substance it is dissolved in, and by adding it to our 3.4pH sour brew it has transformed to this stunning indigo purple. How neat is that? #science

SUNDRENCHED JUICY IPA w/ KVIEK - 63 IBU - 6.9% ABV Style: Kveik Juicy IPA
Appearance: Cloudy caramel orange, with a fluffy head
Aroma: Nectarines & subtle citrus
Overall Flavour: Juicy papaya, green mangoes & stone fruit with a lush mouthfeel and a mellow finish

Beer-Geek Cheat Sheet: Juicy, fruity hops utilized for low perceived bitterness, support a base of pale & wheat malts, making this IPA deceptively soft & creamy. It’s not a NEIPA, as it utilizes a Norwegian Farmhouse yeast, but it is definitely hazy and juicy! This is style of IPA that focuses on the juicy flavour of hops, instead of the bitterness.

BEAUFORT BLONDE - 5.8% ABV / 60 IBU

Style: American Strong Blonde Ale Appearance: Blonde & beautiful holding a nice white foam Aroma: Sweet malt, grassy, candied citrus Flavour: Bright citrus, grapefruit & lime, balanced with a light malty sweet finish

Beer-Geek Cheat Sheet: Brewed with Citra hops for the citrus character of grapefruit, lime & oranges. Malts included Vienna - light on the palate with fresh bread character; And malted oats, which impart smoothness because of their high content of proteins, lipids and gums. This increases the viscosity and body of the beer, which was balanced by the use of Pilsner malt & high calculated IBUs. This brew has a character of its own - balanced, chewy, crisp and delicious!

WILDFLOWER FARMHOUSE WHITE - 25IBU - 5.5% ABV Style: Dry-hopped Belgian Wit Appearance: Pale yellow with a billowy white head Aroma: Faint spice, citrus & floral notes Overall Flavour: Silky smooth mouthfeel following complex fruit & spice flavours subtly enhanced with green cardamom, lemon peel & elderflowers

Beer-Geek Cheat Sheet: The Belgian white ale (wit beer) style has been hundreds of years in the making, predominantly wheat based, and featuring the use of fruit & complementary spices for complexity. Heavily dry-hopped and precise fermentation temperatures make this beer creamy on the palate, with a bright easy finish.

FOOLS GOLD IPA - 65 IBU - 4.8% ABV
Style:
Session IPA
Appearance: Light gold, with a fluffy white head
Aroma: Lychee, tropical fruits & nectarine
Overall Flavour: Soft citrus & tropical fruit juiciness complimenting a smooth hop bite
Beer-Geek Cheat Sheet: Fool’s Gold IPA has a superficial resemblance to the new wave of juicy IPAs - with its high IBUs, balanced malt character and being hop forward on the palate - but at an ABV that isn’t out to ruin your night! Immensely crushable at 4.8%abv, this is a gentle approach on an IPA that takes the session beer concept but boasts all of the hop character of a stronger IPA. That means you get all of the hop flavour from the same dry-hopping rates used with a regular IPA, but you can have a couple of pints and not feel too slowed down by it. Can’t bear the real thing? There’s always Fool’s Gold!

DEEP ROOTS AMBER ALE - 40 IBU - 6.0% Style: American Amber Ale Appearance: Deep amber with a rocky tan head Aroma: Impressions of dark bread crust with undertones of pine & citrus hops Overall Flavour: An assertive hop bitterness in harmony with a grainy malt backbone

Beer-Geek Cheat Sheet: Moderate to high hop flavor with characteristics typical of American or New World hop varieties (citrus, floral, pine, resinous, spicy, tropical fruit, stone fruit, berry, or melon). A citrusy hop character is common, but not required. Malt flavors are moderate to strong, and usually show an initial malty sweetness followed by a moderate caramel flavor (and sometimes other character malts in lesser amounts). Malt and hop bitterness are usually balanced and mutually supportive, but can vary either way. Fruity esters can be moderate to none. Caramel sweetness and hop flavor/bittern high-intensity, balanced maltiness and more hop presence. It has subtle fruity ale notes, and a crisp lager finish.

STRATHCONA BLACKBERRY FIG SOUR - 20IBU - 5.0% ABV Style: Local Fruit Kettle Sour Appearance: Magenta with a rose coloured foam Aroma: Ripe fruit, jam & floral notes Overall Flavour: Bright berry tartness with a crisp finish & balanced jam-jelly sweetness

Beer-Geek Cheat Sheet: A true Comox Valley brew, made with the help of our community! This dry-hopped, kettle-soured, kveik ale was made with a @bootlegbiology lacto pitch & 250lbs of summer fruit added for a second fermentation. Our loving local community picked blackberries and figs for us to add directly into the fermenter. The fermentation process burst open these little fruit gems, releasing the gorgeous colours, aromas and flavours. All of the fruit was hand harvested and processed in-house, for that real fruit flavour that can’t be replicated from other products. A balanced acidity, with a generous hop addition of Ariana & NZ Pacific Gem hops and fruity Kveik yeast, complements and brightens the multitude of ripeness of the blackberries - without overpowering them. The beer then lends a softer, almost vanilla-like sweetness from the local, ripe figs that were added. The result is a tart, juicy, jelly like sour ale that finishes tannic and bright, begging you to take another slurp. Enjoy this end-of-summer sipper that showcases what our beautiful Comox Valley has to offer.

BREAKFAST CLUB COFFEE LAGER - 30IBU - 4.0% ABV Style: Nordic Black Lager Appearance: Deep brown-black with an off-white crema foam Aroma: Black coffee, dark chocolate with raisins Overall Flavour: Cold brewed coffee, light and effervescent, with hints of chocolate

Beer-Geek Cheat Sheet: Select roast & chocolate malts, cacao husks from @sirenechocolate making process, and a donation of 30lbs of @ethicalbeancoffee make this beer so much more than just a breakfast drink. This black coffee lager utilizes a new kveik strain that can offer Krispy (@escarpmentlabs) lager-like characteristics, and a medium body even with a low ABV. For those of us who love a cold brew, or maybe have to suffer through a nine hour detention in the school library on a Saturday, you’ll wanna join in on this breakfast club.

LANDSLIDE LAGER - 35 IBU - 4.0% ABV Style: Dry-Hopped Kveik Lager Appearance: Extra pale with white foam Aroma: Lychee, white grape & fresh cut grass Overall Flavour: Bright & citrusy hops with a clean finish

Beer-Geek Cheat Sheet: For this end-of-summer banger, our brewer chose a specific yeast strain from @escarpmentlabs - Krispy Kveik Lager, and fermented it on the cooler side to truly enhance the crushability factor. The result is a clean and crisp lager backbone with aromas imparted from the Krispy yeast, complemented by lychee & white grape characters from the New Zealand hops. It’s light and refreshing, but still hits like a landslide of flavour right into your mouth.

TESSA’S TABLE BIER - 25 IBU - 4.3% ABV Style: Belgian Style Session Ale Appearance: Golden yellow with stark white foam Aroma: Floral, bready & citrus Overall Flavour: Sips crisp and dry with notes of elderflower & citrus peels

Beer-Geek Cheat Sheet: During the turn of the 20th century, it was Belgian tradition to sip on this low-ABV tafelbier or “table beer” at mealtimes. Low enough in alcohol that you can have a couple, yet still flavorful enough to satiate your palate and accompany what’s on your plate, this beer was brewed for everyone at the table. In this modern version, a cultivated saison yeast is used to give a Belgian farmhouse flavour that tastes something like marmalade spread over a loaf of freshly baked baguette. Our brewer then foraged elderflowers for the brew, complimenting the bready and citrus flavours with sweet floral notes.

MIDNATTSOL NORDIC IPA  - 63 IBU  - 6.6%  ABV

COLLABORATION w/WILDEYE BREWING & WAYWARD DISTILLERY

Style: Kveik IPA w/Juniper & Gin Botanicals Appearance: Hazy orange, with a fluffy contrasting white head Aroma: Floral, herbaceous, orange rinds Overall Flavour: Bright botanical notes & fresh citrus, compliment a full mouthfeel and a resinous dry finish

Beer-Geek Cheat Sheet: This is a collaboration brew with our friends at Wildeye Brewing! Midnattsol is Norwegian for Midnight Sun, which celebrates the enhanced amount of sunlight during the long awaited seasons of the sun. Inspired by the traditional Sahti brew, this IPA was brewed with kilos of foraged juniper berries. After fermentation, we aged the beer on kilos of spent botanicals from our friends at Wayward Distillery’s Unruly Gin. The result is a complex Hazy IPA that boasts a beautiful bouquet aroma, fresh herbal & citrus notes, a full mouthfeel and a dry resinous finish. Skoal!

BREAKWATER BITTER - 5.7% ABV - 35 IBU

Style: Comox Special Bitter

Flavour: Showcasing soft caramel malts, light fruity esters & a noticeable rustic hop bite this beer finished fairly dry and crisp, with a lingering hop bitterness and a firm, grainy malt flavor.

Beer-Geek Cheat Sheet: A “Comox Special Bitter” is an experimental beer style you may not find anywhere else! Inspired by the German Altbier and the California Common beer styles, this is truly a style unique to us. Fermented with a hybrid German ale yeast, that was selected to thrive at the cool end of normal ale fermentation temperatures, and lagered in the tank for five weeks. The result is hop bitterness well balanced by a sturdy yet clean and crisp malt character. A well-balanced, well-attenuated, bitter yet malty, clean, and smooth, amber- to copper-colored beer. “Comox Special Bitter” is an experience that all beer drinkers can enjoy.

TITS UP GOSE  - 7.3 IBU  - 4.7%  ABV

INTERNATIONAL WOMEN’S DAY COLLABORATION w/Cumberland Brewing Company, Gladstone Brewing, Ace Brewing, New Tradition Brewing, & Beachfire Brewing

Style: Sour Wheat Ale

Our International Women’s Day Collaboration is a hazy Gose! Gose is a sour wheat ale with salt and coriander additions originating from Goslar, Germany over 1,000 years ago. There is a significant salt addition to match the high-saline water profile of the river Gose, and coriander was traditionally added as a stabilizer for the beer. It was once a spontaneously fermented beer but our version was carefully soured and fermented for a tart, yet very drinkable Gose. Kettle soured with Lactobacillus we finished with a nice balance between sour and salt, spice and zest. Using only the best we sourced local sea salt from Vancouver Island Salt Company and added freshly ground coriander and orange peel zested by all the collaborators. The coriander adds a peppery twist unique to this style. Brewed with over half wheat malts, all the opposing flavours are brought together with the gentle bready smoothness of a wheat ale.

KENTUCKY COMMON  - 25 IBU  - 5.1%  ABV

Style: Kentucky Common Amber brown, with an off-white head
Appearance: Light
Aroma: Caramel, crackers and herbal tea
Overall Flavour: Light & malty, with flavours of biscuit and toffee

Beer-Geek Cheat Sheet: This is a collaboration brew with our friends at Cumberland Brewing Company! Originating in Kentucky, this was the most popular brew before the prohibition hit in the 1920s. Traditionally this style uses a German ale yeast that gives a clean, lager-like finish without the months of aging in a cool cellar. Ours was aged 6 weeks to get a truly clean beer with a wonderful full palate of flavours. You will get a nice aroma of toasted biscuits and sweetness from flaked corn. Light and malty, the hops take a backseat for this brew and showcase a truly balanced beer.

This is a new style of IPA that focuses on the juicy flavour of hops, instead of the bitterness. They are often hazy from the technique & amount of hops added during fermentation, in conjunction with the strain of yeast.

Almost 600 years ago in the Belgian village of Hoegaarden, a band of monks experimented by adding oddball botanicals from halfway around the world to their traditional wheat beer. Inspired by their creation, our brewer freshly foraged sumac to put into the kettle, alongside lemondrop hops, and dried lemon peels.

Aroma: Low hop aroma, complimented by grainy sweetness
Overall Flavour: Light bodied, easy drinking lager with a crisp and dry finish.

Beer-Geek Cheat Sheet: This is one of our favourites, our Glacier Cream Ale’s little lager brother. With similar base ingredients, it’s a clean, crisp & crushable beer that is often underappreciated by the beer nerds. Brewing a lager on a small scale system is no light task. It takes 8 weeks from start to finish, and holds no grace for brewing errors. Just like a Snowpack forms from layers of snow that have accumulated in cold weather, this lager is a delicately layered union of water, malt, hops & yeast. No haze to hide potential flaws, no flexing of IBU’s and certainly not a high ABV to drown out a hurried fermentation; this beer is refined & calculated. Snowpacks are an important water resource that feed streams and rivers as they melt, and provide us with beautiful Comox Valley water to brew our beer. Snowpack Lager is an essential thirst quencher that truly exemplifies how simple and clean a beer can be.

TSOLUM RIVER SAISON - 31 IBU - 5.2% ABV

Style: Belgian Style Saison

Complex malt profile of Rye, Oats, Wheat, Munich & Acidulated on a base of Pilsner malt. This malt profile lends itself the complexity and mouthfeel to hold up to the refreshing and spicy notes of the Belgian yeast strain used during fermentation. Accentuated with bright hops, the lemon flavors of Loral shine through. This beer is crisp & refreshing with a higher carbonation and is a great accompaniment to many fall dishes.

Backwoods pours dark brown with reddish highlights and a tan foam. The aroma features dark notes of chocolate, herbaceous sarsaparilla and chestnuts, roasted on the open fire. The flavour is balanced between rich maltiness and hop bitterness, which fills your mouth with full bodied flavours of tootsie rolls, hazelnuts & chocolate malt balls, yet still finishing dry. Backwoods Brown is a clean, easy-to-enjoy dark ale, perfect for this fall & winter season here in the Comox Valley. Cheers!

SUPERNOVA TART ALE - 40 IBU - 5.0% ABV

Style: Dry-hopped Tart Kveik Pale Ale
Appearance: Chardonnay yellow with a quick white head
Aroma: Bright citrus, lemon & lime, kiwi berries, vinous
Overall Flavour: A stellar explosion ofwhite wine grapes, citrus & gooseberry. It’s sour, sweet, then gone.

Beer-Geek Cheat Sheet: This beer was inspired by one of our favourite breweries, @Dageraad! Their tart, juicy kveik fermented ale called ‘Jumo’ was a summer favourite amongst the team here at L&S. With research and development in mind, our brewer drank her fair share of Jumo to educate herself on this unique and tasty brew. To our delight, a tart ale fermented with Norwegian farmhouse Kveik yeast and dry-hopped with Nelson Sauvin & El Dorado hops was born! Kveik’s orange fruity esters are complemented with a generous hopping of Nelson Sauvin & El Dorado hops. The beer was lightly kettle soured to an appropriate level to that of a dry Sauvignon Blanc grape. The result is a tart, dry beer that is like a supernova of flavour in your mouth. A SAUVIN SUPERNOVA IN YOUR MOUTH. And this beer contains no sauvignon blanc grapes - we swear!

Overall Flavour: Tangerines & lingering pine, with low malt sweetness it finishes dry.

Beer-Geek Cheat Sheet: Dry-hopped with Amarillo, Simcoe, Citra & Chinook to flavour this pacific northwest style IPA. Simcoe & Chinook hops lend classic flavours of grapefruit, tangerine & resinous pine. Amarillo & Citra hops have more of a tropical fruit nose and a mango-citrus taste. Swaying from the more traditional English & west coast IPA, this brew has less malt sweetness and a stronger hop presence, yet the lingering hop bitterness is quick enough to make this brew a crushable thirst quencher. Enjoy the glow.

WOODSTOVE WINTER WARMER ALE - 40 IBU - 6.3% ABV

COLLABORATION w/CUMBERLAND BREWING COMPANY!

Style: Herb & Spice / Dark Amber Ale with Sacch Trois

Appearance: Dark amber with an orange hue

Aroma: Sweet Orange, All-spice, dried fruit

Overall Flavour: Warm tannic base with a cranberry-orange burst, finishing dry and delicious

Beer-Geek Cheat Sheet: For our 1st birthday at Land & Sea Brewing, we wanted to brew something extra special with our extra special friends at Cumberland Brewing Company! Together, we brewed a dark amber ale with a very special yeast strain, fresh cranberries, dried orange peels and rosehips. This beer was inspired by the traditional Italian holiday cake, Panettone. If you've never heard of it before, panettone is a cake-bread loaded with candied citrus and dried fruits, then baked in a cylindrical mold giving it a distinctive look. With this holiday treat in mind, we brewed a delicious beer to warm you up this winter season. The malts give a bready base with a medium-light body that was then fermented on kilos of fresh BC Cranberries, with a Belgian Sacch Trois yeast. Kettle additions of cinnamon, sweet orange peel and rosehips add a flavour dimension that’s reminiscent of Panettone, yet balanced and crisp to shine as an ale. With subtle tannic qualities from the cranberries, this beer finishes dry and delicious. It’s the perfect accompaniment to warm you up by the woodstove this winter!

VITAMIN SEA - 4.0% ABV / 23 IBU

Style: Dry-hopped Kveik Lager Appearance: Extra pale straw with a pillowy white head Aroma: Lemon sherbert, fresh ginger, orange blossoms Flavour: Bright & crisp, with an off-dry sweetness of lemon citrus & a floral hop backbone

Beer-Geek Cheat Sheet: We could all use an extra dose of Vitamin C these days. Our brewer was inspired to make a lager after imbibing a locally made small-batch Vermouth, from our very own Comox Valley winery Beaufort Wines. This excellent vermouth shines solo over ice, or in mixed cocktails like the white negroni. Vermouth, a fortified, aromatized wine has its roots in ancient Europe, where it was originally used as a digestive tonic. Bitter herbs, spices, and citrus fruit are often used in flavouring either the base wine, or the fortifying liquor. With this in mind, our brewer chose a specific yeast strain in partnership with Escarpment Laboratories - their unique Krispy Kveik Lager strain. It boasts a lager fermentation that produces no sulphur flavours, in as little as 3 days. From there, the yeast aromatics and flavours were enhanced by the addition of kilos of spent citrus from the making of Beaufort Wines Vermouth, added into the secondary fermentation & conditioning phase. The result is a clean and crisp lager backbone with the Krispy citrus aromas imparted from the yeast, floral characteristics of the Loral hops, and this special vermouth. The result is a pleasant balance of a crisp and refreshing lager with a bright citrus flavour and a subtle hop nibble.

PORTSIDE PALE ALE - 5.5% ABV / 43 IBU

Beer-Geek Cheat Sheet: American Pale Ales inspired the American IPA with lots of hops, lower alcohol content, and a wonderful aroma. PNW hops including Simcoe, Centennial, & Columbus, boast flavours unique to us in the Pacific Northwest. The low malt character paired with substantive hop flavours, make for a brew thats refined for maximum drinkability.

ESTUARY SESSION IPA - 50 IBU - 4.5% ABV

Style: Session IPA Appearance: Golden with a bright white head Aroma: Berries, lemon, fresh cut grass Overall Flavour: Refreshing, hoppy & moreish with notes of citrus & spruce

Beer-Geek Cheat Sheet: Our very own head brewer Tessa, brewed this recipe for the people of the UK this passed February. She was invited to brew Estuary Session Ale @hook_norton_brewery in England, for the UK pub chain @jdwetherspoon. It was so tasty that another batch was made right here @landandseabeer! This special brew utilizes the unique Hook Norton Brewery yeast she brought back, and her hand picked Vancouver Island spruce tips. The result is a light, refreshing hop-forward beer with a pleasant lingering of spruce resin and lemon-lime candies.

BLACK DIAMOND LAGER - 22 IBU - 4.5% ABV Style: Nordic Black Lager Appearance: Deep amber like molasses Aroma: Cold brew coffee, blueberries, cacao Overall Flavour: Light roast & chocolate flavours mingle with coffee notes and dark fruit. Finishing quick & crisp

Beer-Geek Cheat Sheet: This is a special lager brewed with the “Krispy” strain of Nordic Kveik yeast from @escarpmentlabs . To compliment the nature of this yeast, speciality malts and hops were used to create a clean, crisp and crushable black lager. Escarpment Labs explain that it’s a pseudo lager yeast, capable of making clean tasting beers at elevated temperatures, yielding a clean ferment in record time. This process is not that unlike a Black Diamond run on the mountain…steep - full of flavour; narrow - low in ABV; fast - real easy to drink. It may be unconventional, but let's be honest, there isn’t anything difficult about drinking this lager! Ready to enjoy amidst the trails, cliffs, and high winds - or right here at Land & Sea

STRATHCONA BLACK CURRANT SOUR - 20IBU - 5.0% ABV

Style: Fruited Kettle Sour Appearance: Bright Fuchsia with a soft pink foam Aroma: Huckleberries, currant flowers & summer hay fields Overall Flavour: Tart, berry, refreshing

Beer-Geek Cheat Sheet: This dry-hopped, kettle-soured, kveik ale was made with an @escarpmentlabs lacto pitch with 200lbs of summer fruit added for a second fermentation. Three varieties of whole fruits were added directly into the fermenter; local black currants from @amarafarms, wild harvested blueberries and huckleberries foraged by @nickhuttonjay & our brewer @tg.brews. The fermentation process burst open these little fruit gems, releasing the gorgeous colours, aromas and flavours. The fruit was all hand harvested and processed in-house, for that real fruit flavour that can’t be replicated. It’s tart, juicy, tannic and bright - a thirst quenching summer sipper that showcases what our beautiful Comox Valley has to offer.

HOOKY SPECIAL BITTER - 35 IBU - 4.3% ABV

Style: Extra Special Bitter (ESB) Appearance: Black like molasses with a nice tan head Aroma: Faint caramel, dates, herbal tea Overall Flavour: Showcasing soft caramel malts, light fruity esters of the English yeast strain & a balanced rustic hop bite

Beer-Geek Cheat Sheet: Our very own Head Brewer recently returned from an exciting trip to the UK where she represented Canada at an elite gathering of international brewers, hosted by @jd.wetherspoon. Tessa was 1 of 5 brewers chosen internationally to brew her own recipe at the @hook_norton_brewery - a 170 year old, family owned, Victorian tower brewery in England. Upon her return, she brought a sample of the brewery’s distinctive yeast strain back to Canada to make this very special Hook Norton original brew for us to enjoy. In collaboration with the fine brewers of Hook Norton, this beer is lovingly called “Hooky Special Bitter” with a nod to the nuances of an extra special bitter (ESB), the brewery in which it originated, and the specialty ingredients of the brew. This is a unique treat here at Land & Sea Brewing, available in cans and growler fills.

STRATHCONA SOUR - 20IBU - 5.5% ABV Style: Kettle Sour - Cranberry & Blood Orange Appearance: Light hazy pink Aroma: Grapefruit candy, cranberry juice Flavour: Refreshingly tart, juicy & off-sweet

Beer-Geek Cheat Sheet: This is our holiday version of Strathcona Sour. With hundreds of pounds of real cranberry and blood orange, we delicately kettle soured our base malts and lightly hopped them with juicy Aloha & Ariana hops. The result is a bright, juicy kettle sour that leaves just enough tartness from the cranberries to make you want another sip!
